Fusion dishes have helped fill unique spots on menus with flare and originality. Fusion food in Singapore has been a hit with everyone since the cooking style was first explored.
The term fusion cooking has been thrown about rather flippantly since its conception in the 70’s. Whilst cooking was usually always culturally aligned to just a few styles, it’s now far more liberal and experimental. Who dares, wins!
Chefs use fusion cooking to broaden their repertoire and to add truly unique dishes to their lineups. Over time, some notable mainstream fusion cooking examples include Chinese takeaways in the UK who also serve traditional fish and chips. Now, we have dishes which really are fused together on the same plate. Spaghetti with curry meatballs, stir fry and chips and Mexican ravioli are all awesome examples of fusion dishes that really are tasty to match their criss-crossed nature.
Chefs today are looking to experiment fusion food in Singapore. There will always be many, many restaurants serving the more traditional and classic dishes which are enjoyed by almost everyone but we now, have arrays of fusion restaurants in Singapore which provide some gorgeous tasting, lovely looking and at times, downright outrageous dishes.
CreatureS Restaurant
Creatures, situated in little India is a famous fusion restaurant with a fine atmosphere and some great dishes to match their sleek styling. Their motive is to fuse Asian and Western food with flair and passion whilst ensuring that their dishes are actually highly researched and well-thought out. One such example is their Urban Baba Babi Pongteh, a slow-cooked pork belly dish in tao jio, all served with a French baguette!

Quentin’s Eurasian Restaurant
Quentin’s Eurasian Restaurant seeks to take decades of home Eurasian cuisine and put it all into a considered menu that is full to the brim with great dishes, some well-known classic dinners and some funky new takes on classics. The portions are huge and with dishes like fish Bostador, Porki Tembreneu and fried Okra, there’s nothing lacking. The chef takes enormous pride in his menu and each dish is developed with a careful balance and eye for innovation.

Folks Collective
Folk’s Collective is a vintage styled restaurant situated in the fringes of Singapore’s CBD. With a classic, warm and atmospheric interior and fusion cuisine based on Thai dishes, this restaurant has earnt some superb reviews.

The Tuck Shop
This riverside restaurant and all-round hang out is situated on Guillemard road in Singapore. Some of their dishes are fully customised and the Boozy Brunch section of the menu hosts some really funky takes on lagers and beers. One is a lager with fresh calamansi juice and the subtle flavours of Gula Melaka. Other dishes include chilli crab and there’s tons of various salads, vegetarian options and lunchtime classics.

North South East West Fusion Vegetarian Cuisine
This amazing fusion restaurant has earnt itself some superb reviews. Like its name suggests, it covers all manner of international cuisine. It’s a highly regarded vegetarian restaurant and one of its signature dishes, the Hainanese Beef Noodle, is known for its large portions of thick broth noodles with great mock beef derived from mushroom stems. The hotdogs are great and the mock chicken dishes really hit the spot!

Candlenut
This restaurant was only just recently awarded a much-sought after Michelin Star. That says it all really – the dishes here are superb. Classic Peranakan dishes are mixed up with other cuisine delightfully. One such dish is the Assam Sea Bass fillet. Candlenut is exquisite dining for any fusion fan!

Tucked away with a superbly designed and comfy interior, this fusion restaurant is quirky and features some great dishes that satisfy even the quirkiest customers. You can tuck into some Tom Yam spaghetti with seafood and enoki mushrooms or a miso-marinated dish cheekily named “I’ll Find Salmon Like You”.

Ding Dong
Ding Dong accomplishes the brave with fine fusions inspired by Southeast Asian cuisine. Some real decadent dishes include tune loin with green papaya and sour sauce or crispy pork trotter. Some awesome but slightly crazy cocktails join the lineup, including vodka cocktails with chilli brine and vermouth with rice-chip. Ding dong!

Nuvo is a real pioneer of nouveau fusion cuisine in Singapore and focuses on a finely balanced Italian-Japanese menu. The Blackened Soyu River Prawn is a highly regarded dish and is combined with seared pancetta sea-scallops and Mikan glazed carrots.
